1Preheat oven to 400 degrees. In a small pot , bring 1 cup water to a boil with the veggie stock concentrate and a large pinch of salt . Once boiling, add basmati rice , cover, and simmer for ⏱️ 15 minutes , until tender.veggie stock concentrate: 2 unit, salt, basmati rice: 2 c

3Toss the tomatoes on a baking sheet with 1/2 tablespoon olive oil , half the thyme, and a pinch of salt and black pepper . On the other half of the baking sheet, rub the portobello mushrooms caps with another 1 tablespoon olive oil and season with salt and pepper. Roast the tomatoes and Portobellos for ⏱️ 10 minutes , until softened. 4Meanwhile, heat 1/2 tablespoon olive oil in a large pan over medium heat. Add the sun-dried tomatoes and cook, tossing, for about 1-2 minutes, until softened.
